Ethiopia, Guji Shakiso

Tasting Notes: Mango, Berry, Lychee, Brown Sugar

Origin: Ethiopia
Region: Guji, Shakiso
Elevation: 1,800–2,200 masl
Variety: Ethiopian Heirloom
Process: Natural
Roast Level: Light–Medium

Bright. Clean. Packed with flavor.

This natural-process Guji delivers bold fruit character without going over the top. It opens with juicy mango and ripe berries, followed by smooth lychee sweetness and a brown sugar finish that keeps it grounded.

Sourced from smallholder farms in Shakiso and dried on raised beds at the Sawana Washing Station, this lot showcases what makes Ethiopian naturals so sought after: care, clarity, and big flavor.

Whether you're brewing hot or flash-chilling over ice, this coffee is balanced, easy to dial in, and hard to forget.

Roasting Notes

Naturals can get wild quick — so this one took finesse. I started with a high charge to keep the fruit bright, then pulled back during the mid-phase to let sweetness build without blowing out the clarity. I kept the Maillard phase steady to develop body, but dropped it shortly after first crack to lock in the tropical notes without muting them. Light development, clean finish — no baked fruit, no muddiness, just a crisp, juicy cup the way a Guji should hit.
